Since you’re all experts on how to make cauliflower rice now, I’ve discovered another great way to use it this summer: in tacos! SO easy, low calorie, and a great option to beef, even if you love the stuff.


The first step is to create the ‘rice’ in a food processor. Once complete, sauté it with a little olive oil and onion. But the real coupe de gras is the uber tasty sauce that goes in next. Simmer sauces by Simply Organic are filled with everything you would normally take hours to prepare from scratch. Did I mention easy? In just minutes, your Cal-Mex dinner will come to life. All you need now is a side of beans, slaw …and a watermelon margarita:)

Cauliflower Tacos with Coconut Flour Tortillas – Makes 8 tacos


Always trying new products, I recently discovered these tortillas which are seriously the best I’ve ever had (save homemade corn ones hot off the griddle.) These are light but quite sturdy (insert frown when the wheat ones fall apart) and come from Siete, which also makes an almond flour variety, too. There is no coconut flavor but you reap the health benefits of high fiber as well as being gluten free. Both the simmer sauces and tortillas are available at Whole Foods markets, so I presume you’ll find them online soon, too 😉


1/2 large yellow onion, chopped
I TB avocado oil (great for high heat cooking)
2 cups cauliflower rice
1-2 packets Simply Organic Mild Taco Simmer Sauce
8 Siete Cassava Coconut Tortillas (I hear the almond flour ones are great, too)

Heat oil on medium and sauté onion in a large skillet until soft. Add the cauliflower rice until golden brown and pour in sauce (I start with one packet but usually add more.) Cook another 2-3 minutes and scoop about 1/4 cup into each tortilla. You want to leave room for the other goodies…
