Raw Slaw

I have been on a kale kick lately.  Sounds pretty strange, doesn’t it?  Ah, but the reward is how good I’m feeling!  So while I may preach ‘all things in moderation’…I’m actually OK with indulging in a bit of healthy greens for a spell.  And truth be told, the dishes I’ve been making are uber delicious.

My CSA (farm to porch) box has been overflowing with a bounty of dark, leafy greens – the kind I incorporate into my meal plan at every turn.  I eat greens at least twice, sometimes three times per day…and not to lecture anyone, but you should, too…

Fish in a Pocket

Last night my cooking class featured easy, low-calorie foods.  Two of them have appeared before – cauliflower couscous and raw kale slaw.  The addition was halibut ‘en papillote,’ or the fancy (French) way of saying ‘fish in a pocket.’  It is the easiest preparation ~ no fuss, no mess.  And the ‘wow’ factor for those at the dinner table is the ultimate endorsement.
